Learning Journey Explores the North Coast

We recently took a group of chefs and hospitality professionals on an insightful Learning Journey to the North Coast, gaining first-hand understanding of the innovation, collaboration, and craft that define this region — renowned for its high‑quality produce and talented makers.

Organised in collaboration with Food NI, the trip gave participants a behind‑the‑scenes look at standout regional producers, with plenty of opportunities to make connections, exchange ideas, and spark future partnerships.

The journey began at Fidela Coffee in Coleraine, where David shared Frank and Rachel’s inspiring story of linking Colombian coffee farms with their roastery on the North Coast. Their ethos of care, traceability, and respect for growers and customers alike shone through — a model of community‑minded craftsmanship, from bean to cup.

Next came a stop at The Lamb Van, an innovative farm business dedicated to showcasing local lamb in new and creative ways. The group heard how a small flock of grass‑fed, NIFQA lambs, ethically reared near the Dark Hedges, has become the heart of a thriving enterprise spanning retail, catering, and on‑farm events — all driven by a commitment to sustainable, nose‑to‑tail cooking.

Over lunch at The Courthouse Bushmills, participants met members of Taste Causeway and enjoyed a locally inspired menu featuring Broighter carrot soup with Partie de Moi pumpkin spice, Moyletra Moiled beef cooked with Lir Whiskey, and homemade focaccia. A tour of the venue followed, including a visit to The Designerie, a space that champions local producers, makers, and craft communities.

Finally, at Broughgammon Farm and Shop, Charlie Cole offered a fascinating insight into regenerative farming in practice — from sustainably raised meats and seasonal vegetables to workshops and farm‑to‑fork suppers that reconnect people with the origins of their food.

Many participants left inspired by the openness, creativity, and collaboration of the North Coast’s producers — and eager to build new connections across Northern Ireland’s food and drink community.
