Mike’s Fancy Cheese is proudly leading a new tradition of raw milk cheesemaking in Northern Ireland. From their small dairy in Newtownards, Mike Thomson and his team have spent over a decade perfecting Young Buck — a Stilton‑style blue cheese made with locally sourced raw milk and plenty of patience.

As cheesemakers and mongers, they stay close to their craft and customers, balancing time in the dairy with work at their shop on Little Donegall Street. That hands‑on approach means every wheel tells a story — of local farms, quality milk, and a community of Irish cheesemakers keeping artisan skills alive.
