Founded just before the pandemic by chef Nallaine Calvo, Kubo started life as a home‑based takeaway, using recipes handed down through generations to introduce Belfast diners to the comfort dishes and celebration foods of the Philippines. From their signature kamayan kits – banana‑leaf lined boxes designed for eating with your hands – to rice bowls, salmon ceviche poke, fried chicken with calamansi and sticky sauces, the menu showcases the diversity of Filipino cooking while staying rooted in authenticity.
Now operating from their own space in Great Northern Mall, Kubo has become one of Belfast’s best‑loved independent street‑food spots, known for selling out, welcoming families and offering strong vegan and vegetarian choices alongside traditional meat and fish dishes.
